Cheesseeeeeeeeeeeeee cake!





Hey guys! I made this cheesecake when I went home for Easter/ my brothers bday. my family all loved it. It was my 3rd time making cheesecake ever so I had kind of got a hang of it. Well here it is enjoy! And i had no time to make it look good coz the monstrous eaters I have called my brothers/ lil cousins finished it before i could say jackrobinson!!!!!


Recipe!
Ingredients:

Crust

2 tablespoons sugar
1 1/2 cups graham cracker crumbs
4 ounces butter or margarine, melted

Filling

1 cup granulated sugar
3 pkgs. (8 oz. each) cream cheese, softened
1 teaspoon vanilla extract
2 eggs
1 8-ounce carton of sour cream

Instructions:

Combine graham cracker crumbs with 2 tablespoons of sugar and the melted butter or margarine. Press into the bottom of a springform pan.

Set aside.
Cream the softened cream cheese with the sugar and vanilla extract.

Add the eggs one at a time, beating thoroughly after each addition. Add the sour cream, which should be at room temperature.

Pour into graham cracker crust.

Bake for half an hour at 350 degrees F.

Turn off the oven, leaving the cheesecake inside for another half hour.

Chill and refrigerate for at least 4-8 hours.

Top with your favorite fruit topping, garnish with fresh strawberries or graham cracker crumbs.

RICE AND STEW IS A STAPLE MEAL IN ANY NIGERIAN FAMILY. I eat rice at least 3times a week, sometimes more! this is One of the many ways I make it. add some plantains! and voila!!!!! yumm!!

Recipe.

Ingredients.

1 pack meat/fish/chicken
5 big tomatoes
2 red peppers
2 onions
3tbsp oil
3 Maggi cubes
1/2 tbs dry pepper
1 fresh jalapeno pepper(or any really hot pepper)

Cut if needed- Wash the Chicken, add onions, dry pepper, salt, maggi and curry to pot, let it boil on low heat without adding any water at first. Add water, once it starts to dry up. boil till soft,remove and grill/fry if you choose or just let stand.

cut tomatoes, onions, and red ball peppers into small squares. Blend on medium speed till well blended.

Pour into pot and let boil till it is completely dry. stir often to ensure it does not get burnt on the bottom.

Reduce the heat to a 5. Use another pot and(or the same pot you can pour the sauce out of the pot into a bowl) add oil into pot.Add half of the onions(chopped into little pieces),let it melt. pour tomatoes sauce into pot(note it will splash so be CAREFULL, cover pot!!!)

Allow to fry for 5mins on reduced heat. Add Maggi cubes, curry, and salt to taste.

Increase heat back to 7 and allow to boil for 10mins or until sour taste is gone. Add more Maggi or salt if needed.

Add the stock from the boiled Chicken to make less thick and stir. Leave to boil for 5mins. Add chicken,stir and leave to boil for another 10mins.

once boiled taste to see if it taste right, then remove from the stove top. boil your rice, fry your plantains and voila!!!! A typical Naija meal!

Strawberry Upside-down cake








2 c. strawberries (cut in pieces)
1 pkg. strawberry Jello (3 oz.)
1 pkg. miniature marshmallows (10 oz.)
1 white or yellow cake mix

Grease and flour 9 x 13 cake pan. Spread strawberries evenly in bottom of pan. Sprinkle with dry Jello and evenly distribute the marshmallows over all. Prepare cake mix with 1 cup of water and 2 eggs. Spread over strawberries, Jello and marshmallows. Bake at 350 degrees for 50 to 60 minutes. Let cool and cut into squares. Serve by flipping each piece upside down on to plate. May top with Cool Whip.

Grilled fish with steamed Veggies

Anybody who knows me well, knows how much I love to cook and eat good food. I would try anything once! I cook almost everyday. I love to look up recipes and try them out! Being in the kitchen for me is fun and the most relaxing time of my day.
