Quick Dinner

Hi everyone! Its been a busy few weeks and I had little or no time to cook anything tangible for this blog. Either that or when I cooked, I was so hungry and ate before I could take a picture!*hides face in shame* Well here is a really quick dinner that my roommates and I ate on our last night together in 2010. We are all going away to our families in the next few days, so we had a little dinner. Nothing fancy! Hope you enjoy.





Ingredients

*1-Tilapia
*3-potatoes
*Mixed veggies
*oil
*Season salt
*Oregano
*black pepper
*Basil
*Soy sauce
*Oyster sauce


Fish

Grease the pan with 1tbs of oil and place defrosted fish in pan. Add seasoning salt, oregano and black peppers to taste. allow to fry for about 15mins, turning fish every 5mins.

Vegetables

Grease pan with 1tbs oil, add mixed veggies and allow to fry for 5 mins. Add 3 tbs of soy sauce and 3 tbs of oyster sauce. Add chili sauce if you wish. Stir and allow to cook for 10mins.

Potatoes

Peel potatoes and boil in salted water for 10mins or until considerably soft. Grease pan and add potatoes. sprinkle basil on potatoes and allow to roast for 7 mins. stirring occasionally so it does not get burnt.

This meal took me approximately 30mins to make (with the help of my roommates) But it is really easily and really tasty!!! Try it and let me know!

****Serve with a glass of white wine for maximum laughs...:D

Curry Goat w/ Roti

One of the things about visiting a lot of food blogs daily is that I get a lot of inspiration on what to cook. Sometimes they do not even have to be food blogs just regular blogs inspire me and I am grateful. On one of my numerous blogrounds(I dont remember which blog sorrrry!!!!) The blogger mentioned Curry goat and Roti and I just felt an instant hunger pang(Exaggeration much???..lol)and set out to make it the next day. Here is a simple recipe.

Curry Goat

1lb goat meat-cut into bite sizes
1 large onion, chopped
3 Scotch bonnet peppers,
1 teaspoon allspice/adobo
salt to taste
black pepper to taste
3 tablespoons curry powder (more or less to taste)
2 garlic cloves, minced

Season meat with the seasoning salt. Heat the cooking oil in a large pot & add 1 Tablespoon of the curry powder. Cook stirring constantly until the curry powder darkens quite a bit . Put meat in pot along with onions, scallions, garlic & scotch bonnet pepper. Fry a little (about 5 minutes) over medium heat. Add thyme, remaining curry powder, black pepper & a little (1/2 teaspoon) of seasoning salt. Cover with water & simmer uncovered until meat is very tender & sauce is thick. Taste sauce & add more salt, if necessary.

Roti
Flour – 1 cup
Salt – 1/2 tsp
Oil – 4 tsp
Warm Water – 3/4 cup
All-purpose flour – for rolling and dusting

Method:

In a large mixing bowl, mix Flour and Salt well. Add Oil and mix until all lumps are gone.Add Warm Water a little at a time to form a medium soft dough ball. Do not overwork the dough. Add few drops of Oil and coat the dough ball. Cover and let it rest for 15 minutes.Heat skillet on medium heat. Knead the dough once and divide into golf ball size balls.Dip one ball into the All-purpose flour to coat and roll it out into a thin disc. Keep dipping the rotli into the dry flour to prevent it from sticking to the rolling surface. Flip to the other side once you see bubbles appear on the surface. Allow it to cook for 10-15 seconds.

This was a G.O.O.D. dinner on a snowy evening after work. Hope you enjoy!!!

Oreo Cheesecake Cupcakes


Last week, I was feeling very inspired. I cooked almost everyday!I also baked! twice! Yes yes yes "pats my back" Here is a simple recipe for Oreo Cheesecake! It was sooooooooooooooooo G.O.O.D! I saw this recipe on one of the numerous food blogs I visit and I just fell in love. well here is a simple process.



This is what you need...

Add them all together.

Add the oreo cookies.

Put the oreo's on the bottom of the pan

Put the batter in the muffin pans

VOILAAAAAAAAAAAAAAAAAAAAAAAAA..:)

Martha Stewart's Oreo Cheesecake Cupcakes

Ingredients:
42 cream-filled sandwich cookies, such as Oreos, 30 left whole, and 12 coarsely chopped
2 pounds cream cheese, room temperature
1 cup sugar
1 tsp vanilla extract
4 large eggs, room temperature, lightly beaten
1 cup sour cream
Pinch of salt

1. Preheat oven to 275 degrees. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.

2. With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.

3. Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.

4. Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool completely. Refrigerate at least 4 hours (or up to overnight). Remove from tins just before serving.

Day Two: Fish pepper soup & plantains

In my quest to eat three times a day, I have to become more creative and I have to think outside the box of rice or pasta! So today I took it back to Naija made some GOOD fish pepper soup, grilled some plantains and DALLLLLMIIIITTTTTT! my friend Cindy and I where on could 9 for a minute. Tehehehehe. Very easy recipe.

1 Mackerel- cut into 4 pieces
1 onion
2 scotch bonnet peppers
curry,salt, garlic powder and dry pepper

In a pot, boil fish with 3 cups of water.
Add chopped onions and chopped scotch bonnet peppers.
add spices to taste
Let cook for 20mins or until fish is cooked.
Add more water if needed
serve with plantains, yams, rice or alone.



This is such a quick meal! and sooooooooooooo G.O.O.D!

Riblets et Potatoes

This week I am challenging myself to eat three times a day. I have VERY bad eating habits where I just do not eat. Not because I do not have food at home, but because I am not hungry. This has made my metabolism VERY slow. I am trying to jump start it(sigh). along with my ridiculous gym regimen, It is about to be a GOOD winter!

So today I cheated a little.. I went to church without eating..:( But I had a Jamaican patty right after church and got home and made this YUMMY YUMMY YUMMY DINNER! It might not be the healthiest but I was craving something messy with bbq sauce all over it. Tehehehehe..and voila..:)



I am making these YUMMY cupcakes tomorrow if you are in the Ottawa area (and I know you) stop by my house and grab one around 7ish. lol

*I also just signed up for a new project locally(Ottawa) as well! I am excited about it too! I'll fully let the cat out of the bag once I have everything set in stone!

Scotch Eggs

#FactAboutMe I do not eat eggs. Among many other things. I am not a picky eater, I just do not fancy eggs. If I discuss the main reasons for not eating them on this blog, I think I might offend some people. So I would just keep it moving with the post. Tehehe

Among my friends, it is common knowledge that I can cook. Even though I might not make something often if i am given a recipe I can possibly make it. So almost weekly I get asked to make almost everything you can think of. The bestie asked me this week to make him some scotch eggs. I immediately said "I don't eat eggs so I cant do it" to which he replied "who told you to eat it? I just want scotch eggs joor" Anyways he had to beg and beg and beg and I called him "beggy beggy" after which I looked up the recipe. Turns out it is actually not that difficult to make. So I set out to make something I would not eat. Here is the process.


Boil the eggs...

This is all you need basically..

cover the eggs in the sausage meat...

roll in bread crumbs



DEEP FRY OR BAKE



AND VOILAAAAAAAAAAAAAAAAAAAA!!!

I think it turned out really well. This is what it is supposed to look like right? My roommate from St Vincent ate it and she loved it so much. So I guess it tasted good. lol

p.s After i finished typing this post, I actually went and tasted what was left!!! I ate eggs for the first time in like 10yrs!!!!! i ate chicken abortion!!! #DEAD! Ohh in case you are wondering it tasted good! YAY!!!

RECIPE

7 eggs 1 extra egg to glaze
1 roll Sausage
1 cup bread crumbs
1 tsp Goya Adobo seasoning
1 tsp garlic/curry powder
1 tbsp flour


1. Boil eggs over medium heat for 10 minutes. Remove and put eggs into cold water. Set aside.
2. Remove sausage and add adobo curry, garlic powder. Work into sausage with hands
3. Break last egg, whisk.
4. set aside bread crumbs
5. Prepare pot to deep fry or Prepare a baking pan with foil.
6. Drain water and peel eggs. Roll each egg in flour.
7. Scoop 1.5 tbsps sausage mixture into your palms (dampen palms). Make a well in the center. Put egg in center and work sausage around till covered. Roll covered egg in beaten/whisked egg.
8. then roll in bread crumbs
9. fry.

Rice with Spinach sauce + plantains

I am sure almost everybody gets tired of the regular rice and stew meal. It is such a staple in the Nigerian diet that sometimes I just want to rebel nd not eat rice and stew for weeks at a time. But alas the Nigerian in me cannot survive without carbs so what do I do? I make alternatives instead. I had rice with a spinach sauce this week and plantains and I can guarantee you that this is not healthy and I ate WAYYYY to much for my own good..*but it tasted so good..:(* I was however able to console myself with the whole spinach are vegetables so therefore it cannot really be that bad…haha!

I have been invited for a live cooking show next week. I am so excited! I am not cooking on it though, only watching! I think it would be a good opportunity t see how the industry works and I can ask questions as well that can hopefully help me in the direction I want all of this to head in the future. Meat-Pie + Pasta Galore!

I had been craving meat pie for a while now and not the #abaversion Jamaican patties(LOL) but real Nigerian-kinda-meat pies. Well this weekend I called my favorite cookbook aka my mother and asked for a recipe. I also asked a few friends and got to work. The dough turned out amazing! the sauce part is the east part for me. For a first timer I guess being around the kitchen I knew the proper consistency and it turned out well overall. Next time I would have to work on the aesthetics though... I wish they looked as good as they taste.




I eat a lot of pasta because not only are they the fastest thing I make, they are also very easy and taste great. Seen as they are carbs, I am trying to limit my pasta intake therefore I am trying whole wheat pasta and other healthier choices instead and so far so good. Here are two different outcomes from this week.

I call this "Jollof Pasta"-- its just like making jollof rice instead you use pasta and add some ground beef...:)

I'm Backkkkkkkkkkk

Hello loves!!!

I am so sorry for the impromptu hiatus I took from this blog. So many people emailed, commented on my other blog, DM-ed and tried to contact me to see if all was well.Yes all is well. You see it is summer and once it is warm outside I cant seem to seat down in one place. So almost every weekend ( which is normally when I cook for this blog) I traveled or was at one engagement or the other. Alas, summer is almost over, I am rounding up this season(still got like 2 trips)and preparing for school, work and the dreaded winter time!

Anyways back to regular scheduled programming. Over the summer fruits seem to be in abundance in this country for a good price too. I always buy strawberries, kiwis, mangoes, banana's etc in large amounts and when I cannot finish them before they go bad, I make a lot of smoothies. To make any smoothie, just cut up the fruits, add some yogurt (preferably vanilla) add some ice and blend and viola!!! You have a refreshing summer drink.

This one right here is Kiwi and banana! It was so tasty. I actually used vanilla ice cream, because I was out of yogurt.


I also made lasagna over the weekend for a friend of mine that was visiting. We ate lasagna, had ice cream and watched girlie movies...:) GREAT TIMES! The recipe for lasagna is below.


All cut up...Yummmmmmm.....sooooooo unhealthy!



Lasagna
-One pack oven ready lasagna pasta
-Ground beef
-ragu or pasta sauce
-red peppers, onions. Or other veggies(Frozen mixed veggies)
-vegetable oil
-Cottage cheese
-Mozerella cheese
-Spices(salt, maggai, pepper,curry,etc)

For sauce.
In a clean pot put 3 tablespoons of oil(allow to get hot add ground beef and fry. In another pot, add chopped onions, and peppers or other veggies. fry for 5 mins or till onions are sautéed. Add salt, Maggie, curry(whatever spices you use). Then add ragu sauce and let it is boil for 10mins on medium heat. Add cooked ground beef to sauce and let it cook for 10mins.

Lasagna- (if they are not oven ready, you can boil them till it is soft first)

Place one lasagna in pan add sauce on top. Add cottage cheese, mozerella cheese and Repeat layer until ingredients are done. Preheat oven to 350 and place in oven for 30-35mins (but if u boil it, it should be ready in 15-20mins). and voila we have Lasagna!

Bruschetta + Jollof Rice

Hey guys I just want to use this opportunity to say A BIG THANK YOU to everyone who voted for me. I won the BEST FOOD BLOG during the Nigerian Blog awards and I am very very very grateful to everyone to be recognized by my peers. It is really funny how this blog started as a hobby but by the grace of God it will be going somewhere BIGGER IJN!.

Anyway this week I made Bruschetta as an appetizer for dinner I had with some of my friends. It was really good and it is also really simple.



..and for the main course we had Jollof rice with chicken. Nothing special because I was soooooo tired after a long day at the beach/water park. Regular Saturday meal!

Apple Pie A'la Mode

Hello everybody, I hope you are all having a splendid Sunday! My church to day was just amazing. We had anointing service and wow, wow, wow, wow is really all I can say at this point! I needed direction last week and after today's service, I can happily say I know everything would work out and God name alone would be glorified. I like the direction God has shown me and I am just working towards the end goal. It would definitely not be easy, but with God by my side....... Ok enough preaching...LOL!

So as we all know, this week was the voting week for Nigerian blog awards, most of my friends wanted me to 'bribe' them with home made cookies, dinners, macarons, you name it, I was asked to make it. LOL. So a few friends came over on Saturday night, I made apple pie for the fist time ever, and we had it with Ice-Cream and strawberries!!! YUM!! I also made macaroons but I was not able to take a picture it was DEVOURED!

Porridge Yam + Shrimp Salad!

Hello Lovlies! How is everyone doing, I hope the week was great and the weekend is looking up, and to my American readers, I hope you are all having a great Memorial day weekend. On to today's post. I cooked Porridge Yam on Wednesday, after reading a post by Audeo and I remembered I had not eaten it in a while! So off I went to the African store after work. All in all it was SO worth it! I loved it. I think I cooked it the Igbo/rivers way cos I noticed Yoruba people don't put leaves...anyways this is how we always cooked it around my parts!



This evening My friend Cindy came over to my house to hangout, it was so much fun and when we got hungry we had SHRIMP SALAD!!!! It was soooooooo GOOD!!!She made it, so all credit goes to her, if you need a recipe holla at me, and I gatchu as always....here we go

You Can eat it like this with just Balsamic Vinaigrette or for a more unhealthy option..which we all opted for....

What I did this Afternoon

Today a friend of mine that I met through church came to spend the day with me. we went shopping and walking and then came home and made a late lunch. It was all very fun and I enjoyed my time with her a lot. I am very grateful for the few friends I have made since moving to Ottawa 5 yrs ago. They keep me grounded and my church family are very special to me. My pastor and his wife are like my parents. They worry about me, call me, take care of me and most importantly pray for me. I love my church and if you are in the Ottawa area ensure to visit Rhema Christian Ministries, and you would NEVER want to leave! I can guarantee that.(ok enough promo...LOL )For lunch, we had Jollof rice, with chicken and Plantains. We were so full we fell asleep on the couch and woke up an hr later to have cookie dough ice-creme, while giving ourselves a manicure!!!!! Great day indeed! although rather unhealthy..gonna go try and work this food out with my WII!!!

Food for the Week

Sorry the pictures kinda suck this week! I was tired when I was done!


Hello everyone! I hope everybody's weekend was amazing. I had a VERY busy weekend albiet a little lazy at the same time. On Sunday night however I decided to cook my meal for the week in an effort to save time and actually eat food.(which BTW is my biggest problem-I don't eat enough!!!) My schedule during the week can be really crazy, and as the summer months draw nearer and the appeal to workout is even higher, I find myself going straight to bed(read twitter) by the time I get home after 7pm. I decided to cook enough for the week, and refrigerate it and hopefully this would allow me to make better and healthier eating choices. So I cooked Fried rice, stew and efo. I am sure somwhere during the week, I would make alferdo pasta or lasagne or even steak, but these are staples that can take me a long way for the week. Everyone should try it...I did this in about 2 and a half hrs. an voila I am set for the week. Have a blessed one!

2cups rice
5 chicken drumsticks
Frozen Mixed veggies(corn, peas, carrots, peppers,)
Chopped Onions
Spices(curry,maggi,garlicpowder,salt)
Oil to fry.

Boil rice in water and a pinch of salt till it is soft.
Boil chicken with the spices till it is cooked and put in the oven to grill. about 300c for 30mins
In a frying pan, Add 3 table spoons of oil, When hot, add chopped onions, frozen veggies and spices.
Allow to fry for 5mins or until onions are sauteed.
Add rice stir till the rice is thorougly mixed with the sauce.

Do this over and over till the rice is done. Depending on how big your pan is and how much you make.

remove chicken from oven and voila we have fried rice and chicken..:)


EFO RIRO

Ingredients. ...

Spinach/Clean and cut.
Beef (Boiled) Save stock.
Dried fish
Tomato sauce
Fresh tomato
onion
Onion powder
Crushed red pepper
Minced Garlic
Palm oil
Salt

Saute onion, tomato and garlic in palm oil
Add tomato sauce and let simmer for 3-5 mins.
Add boiled meat, stock fish, dried fish
Add beef stock (Very little, cos spinach produces water)
Add spinach
Add all seasoning.(maggi, adobo...whatever you like)
Simmer and cook down till there's little or no liquid left.

Very easy to make...make sure the heat is on low the entire time..

Curry Rice



Its been a minute since i posted on here. I have slacked with my daily cooking :( I am trying to do this diet thing. So I have eliminated a lot of carbs from my meals and I'm eating mainly fruits and veggies *insert sick face here* This does not mean once in a while I do not throw in some carbs. Like last night I ate poutine. It is a Canadian delicacy *insert yummmynessssss here* so fattening but so good. This post is about curry chicken. It is one of my favorite sauces with rice, except stew. It is also very easy to make. Made this sometime last week. Sooo good!

Ingredients


Chicken(chicken breast, boneless, cut in cubes)
1/2Onion
Garlic cloves
Curry Powder
sour cream
flour
Spice(salt,maggi,adobo,etc depends on u)


in a pan fry onions and garlic in curry till it is caramelized
spice chicken in another pan and let it sautee for like 10mins or until you can tell it is cooked (do not let the water dry up)
Once chicken is cooked, pour 1 table spoon of sour cream into chicken broth to thicken it. add onions and garlic from earlier and let it simmer for about 5mins. TASTE. if it has a very sharp/sour taste, add a little(I/2 tsp) flour to neutralize it. let simmer for about 5 more minutes and it is ready.

Fish+Plantain...and a Saturday with Macaroons!

Hello all! Hope evryone's week went very well.I am still angry that you guys picked a man's food over mine! but it is well! hehe..anyways! I was craving fish one day this week as usual and I found a new african store just a walking distance from my house!!! So of course I had to go and chekirrrout! lol. This was dinner! YUMMY!


On saturday I made Macaroons! I had never made them before and I did not know how they would turn out. So I was very pleased when they came out right! Here is a quick picture.. If you run to my house, there might still be some!




Anywayz Got to run! I have an event to take pictures at, and it starts in an hr! and I am not even ready..lol!!

pasta

Hey guys! How are y'all doing? Hope everyone is enjoying the beautiful weather that we have been having. I am totally in a spring frame of mind right now! I cannot wait to start wearing dresses and shorts again!and attend barbeque's have summer drinks on my balcony and just soak up the sun!
Anyway today's post is a meal that my special friend(LAWL) made for me when I went to visit him. I took a nap and he cooked me dinner! Don't you just love 21st century men? So after I ate that as his house that weekend, I was craving it some days later and set aside to make mine, with some changes of course..So please which one looks better?? ***pick mine..pick mine** hehe!



This is his. Steak with sauteed tomatoes and onions with Pasta on the side-#HUGEMEAL



MINE!!!..Steak with Grilled potatoes +Gravy and coleslaw. #hugemeal! I could not move after! LAWL!

If you do need recipes e-mail me and I would be glad to send them to you. The reason I don't post them up is because I don't have exact measurements of things. I just use my eyes! But if enough people tell me they dont mind, I would put them up..:)
Steak with Pasta and sauteed tomatoes

RECIPE
Steak
tomatoes
onions
ball pepper
pepper
Spices


Spice the steak with curry, maggi, salt, garlic, onions etc and boil for like 10-15mins or until a little soft.


pop in grill under medium heat for about 20mins after that. you can rub grounded pepper on it if you are a big pepper person. turn once or twice while in the oven so that both sides gets cooked. Cook until soft.

for the tomato sauce just cut up tomatoes, onions, half a bell pepper and the little red peppers and fry on low heat for 10mins. add spices.
