Quick Dinner

Hi everyone! Its been a busy few weeks and I had little or no time to cook anything tangible for this blog. Either that or when I cooked, I was so hungry and ate before I could take a picture!*hides face in shame* Well here is a really quick dinner that my roommates and I ate on our last night together in 2010. We are all going away to our families in the next few days, so we had a little dinner. Nothing fancy! Hope you enjoy.





Ingredients

*1-Tilapia
*3-potatoes
*Mixed veggies
*oil
*Season salt
*Oregano
*black pepper
*Basil
*Soy sauce
*Oyster sauce


Fish

Grease the pan with 1tbs of oil and place defrosted fish in pan. Add seasoning salt, oregano and black peppers to taste. allow to fry for about 15mins, turning fish every 5mins.

Vegetables

Grease pan with 1tbs oil, add mixed veggies and allow to fry for 5 mins. Add 3 tbs of soy sauce and 3 tbs of oyster sauce. Add chili sauce if you wish. Stir and allow to cook for 10mins.

Potatoes

Peel potatoes and boil in salted water for 10mins or until considerably soft. Grease pan and add potatoes. sprinkle basil on potatoes and allow to roast for 7 mins. stirring occasionally so it does not get burnt.

This meal took me approximately 30mins to make (with the help of my roommates) But it is really easily and really tasty!!! Try it and let me know!

****Serve with a glass of white wine for maximum laughs...:D

Curry Goat w/ Roti

One of the things about visiting a lot of food blogs daily is that I get a lot of inspiration on what to cook. Sometimes they do not even have to be food blogs just regular blogs inspire me and I am grateful. On one of my numerous blogrounds(I dont remember which blog sorrrry!!!!) The blogger mentioned Curry goat and Roti and I just felt an instant hunger pang(Exaggeration much???..lol)and set out to make it the next day. Here is a simple recipe.

Curry Goat

1lb goat meat-cut into bite sizes
1 large onion, chopped
3 Scotch bonnet peppers,
1 teaspoon allspice/adobo
salt to taste
black pepper to taste
3 tablespoons curry powder (more or less to taste)
2 garlic cloves, minced

Season meat with the seasoning salt. Heat the cooking oil in a large pot & add 1 Tablespoon of the curry powder. Cook stirring constantly until the curry powder darkens quite a bit . Put meat in pot along with onions, scallions, garlic & scotch bonnet pepper. Fry a little (about 5 minutes) over medium heat. Add thyme, remaining curry powder, black pepper & a little (1/2 teaspoon) of seasoning salt. Cover with water & simmer uncovered until meat is very tender & sauce is thick. Taste sauce & add more salt, if necessary.

Roti
Flour – 1 cup
Salt – 1/2 tsp
Oil – 4 tsp
Warm Water – 3/4 cup
All-purpose flour – for rolling and dusting

Method:

In a large mixing bowl, mix Flour and Salt well. Add Oil and mix until all lumps are gone.Add Warm Water a little at a time to form a medium soft dough ball. Do not overwork the dough. Add few drops of Oil and coat the dough ball. Cover and let it rest for 15 minutes.Heat skillet on medium heat. Knead the dough once and divide into golf ball size balls.Dip one ball into the All-purpose flour to coat and roll it out into a thin disc. Keep dipping the rotli into the dry flour to prevent it from sticking to the rolling surface. Flip to the other side once you see bubbles appear on the surface. Allow it to cook for 10-15 seconds.

This was a G.O.O.D. dinner on a snowy evening after work. Hope you enjoy!!!

Oreo Cheesecake Cupcakes


Last week, I was feeling very inspired. I cooked almost everyday!I also baked! twice! Yes yes yes "pats my back" Here is a simple recipe for Oreo Cheesecake! It was sooooooooooooooooo G.O.O.D! I saw this recipe on one of the numerous food blogs I visit and I just fell in love. well here is a simple process.



This is what you need...

Add them all together.

Add the oreo cookies.

Put the oreo's on the bottom of the pan

Put the batter in the muffin pans

Martha Stewart's Oreo Cheesecake Cupcakes

Ingredients:
42 cream-filled sandwich cookies, such as Oreos, 30 left whole, and 12 coarsely chopped
2 pounds cream cheese, room temperature
1 cup sugar
1 tsp vanilla extract
4 large eggs, room temperature, lightly beaten
1 cup sour cream
Pinch of salt

1. Preheat oven to 275 degrees. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.

2. With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.

3. Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.

4. Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool completely. Refrigerate at least 4 hours (or up to overnight). Remove from tins just before serving.

Day Two: Fish pepper soup & plantains

In my quest to eat three times a day, I have to become more creative and I have to think outside the box of rice or pasta! So today I took it back to Naija made some GOOD fish pepper soup, grilled some plantains and DALLLLLMIIIITTTTTT! my friend Cindy and I where on could 9 for a minute. Tehehehehe. Very easy recipe.

1 Mackerel- cut into 4 pieces
1 onion
2 scotch bonnet peppers
curry,salt, garlic powder and dry pepper

In a pot, boil fish with 3 cups of water.
Add chopped onions and chopped scotch bonnet peppers.
add spices to taste
Let cook for 20mins or until fish is cooked.
Add more water if needed
serve with plantains, yams, rice or alone.



This is such a quick meal! and sooooooooooooo G.O.O.D!

Riblets et Potatoes

This week I am challenging myself to eat three times a day. I have VERY bad eating habits where I just do not eat. Not because I do not have food at home, but because I am not hungry. This has made my metabolism VERY slow. I am trying to jump start it(sigh). along with my ridiculous gym regimen, It is about to be a GOOD winter!

So today I cheated a little.. I went to church without eating..:( But I had a Jamaican patty right after church and got home and made this YUMMY YUMMY YUMMY DINNER! It might not be the healthiest but I was craving something messy with bbq sauce all over it. Tehehehehe..and voila..:)



I am making these YUMMY cupcakes tomorrow if you are in the Ottawa area (and I know you) stop by my house and grab one around 7ish. lol

*I also just signed up for a new project locally(Ottawa) as well! I am excited about it too! I'll fully let the cat out of the bag once I have everything set in stone!

Scotch Eggs

#FactAboutMe I do not eat eggs. Among many other things. I am not a picky eater, I just do not fancy eggs. If I discuss the main reasons for not eating them on this blog, I think I might offend some people. So I would just keep it moving with the post. Tehehe

Among my friends, it is common knowledge that I can cook. Even though I might not make something often if i am given a recipe I can possibly make it. So almost weekly I get asked to make almost everything you can think of. The bestie asked me this week to make him some scotch eggs. I immediately said "I don't eat eggs so I cant do it" to which he replied "who told you to eat it? I just want scotch eggs joor" Anyways he had to beg and beg and beg and I called him "beggy beggy" after which I looked up the recipe. Turns out it is actually not that difficult to make. So I set out to make something I would not eat. Here is the process.


Boil the eggs...

This is all you need basically..

cover the eggs in the sausage meat...

roll in bread crumbs



DEEP FRY OR BAKE



AND VOILAAAAAAAAAAAAAAAAAAAA!!!

I think it turned out really well. This is what it is supposed to look like right? My roommate from St Vincent ate it and she loved it so much. So I guess it tasted good. lol

p.s After i finished typing this post, I actually went and tasted what was left!!! I ate eggs for the first time in like 10yrs!!!!! i ate chicken abortion!!! #DEAD! Ohh in case you are wondering it tasted good! YAY!!!

p.s.s I used the recipe from avartsycooking and tweaked it..thanx mama

RECIPE

7 eggs 1 extra egg to glaze
1 roll Sausage
1 cup bread crumbs
1 tsp Goya Adobo seasoning
1 tsp garlic/curry powder
1 tbsp flour


1. Boil eggs over medium heat for 10 minutes. Remove and put eggs into cold water. Set aside.
2. Remove sausage and add adobo curry, garlic powder. Work into sausage with hands
3. Break last egg, whisk.
4. set aside bread crumbs
5. Prepare pot to deep fry or Prepare a baking pan with foil.
6. Drain water and peel eggs. Roll each egg in flour.
7. Scoop 1.5 tbsps sausage mixture into your palms (dampen palms). Make a well in the center. Put egg in center and work sausage around till covered. Roll covered egg in beaten/whisked egg.
8. then roll in bread crumbs
9. fry.
