Snowy Days.....

Rainy /snowy days make me very lazy! So I barely cook actual meals and just eat very sporadically....here is a Staple meal for any Nigerian...:) Rice and stew...:)



I went to visit a friend of mine last weekend and made them egusi soup, cause they had not had proper food in a loooong time! I am nice!

Happy Valentines day!

Hello lovers!


I made banana bread last Saturday. The recipe was so easy and the bread came out so good. Moist and simply amazing. Let me know if you need a recipe..


I actually cooked proper dinner's everyday this week. I was so proud of myself! Normally I am not a very health eater. I do not eat junk food per se.. I instead just do not eat....at all. I would eat a pita bread for dinner, Or cereal, So this week I challenged myself to cook everyday! I did succeed! so yay me!


Have an amazing Valentines day! I will be with my bottle of wine giving myself a pedicure and a facial while watching a movie..hehe!..Have fun loves! and be safe..In every essence of the word!...xx!

iCraved Yam and CornBeef stew...

I was craving Fried yam and CornBeef stew on Tuesday, Luckily for me I had just visited my mum and she gave me some yam! I love me mummy! hehe...xx!



On the weekend, I was with a special friend and we had fondue.. hehe.. This wasn't my house so we did it the ghetto way and just melted Chocolate over a stove..LOL..fun times anyhowsssss!
P.S My daddy got me my DSLR!!! I love him so much!!! So my pictures would be so much better now! I think I used to try with my regular point and shoot!..hehe!

Schezwan Stirfry with Shrimps

This is a very easy and very fast meal. I made it one night when I came back from work and was too tired t make a big dinner. simple but very filling. need recipes? let me know!



This was also Dinner one night.. the picture did not turn out as nice as I wanted it to but yup..:) This is Grilled fish with some rice and coleslaw...BIG DINNER! I think I was really hungry!



Shrimp Stirfry
1pound of shrimp(or how eva many you like)
-szechwan sauce(or any strifry sauce you like)
-chinese noodles(or pasta. Chinese noodles cook in like 3mins. So I prefer them)
-mixed veggies
-onions
-oil
-spices(Maggie,pepper,salt,garlic,ginger,curry, etc)

Spice the shrimp with salt, curry, and pepper,in a separate pot and boil it till cooked.

Put water on fire in a separate pot, add a pinch of salt

In a frying pan, put a tablespoon of oil and let it become hot

Take your chopped onions and mixed veggies and put it in the pan to fry till they are slightly brown...

Next add spices to the mixed veggies(depends on how you want the food to taste) mix.

Add the shrimps to the pan and add szechwan sauce(or any stir fry sauce) mix. Let it cook for like 3-5mins.

while the sauce is cooking, put the chinese noodles in the boiling water. Cook until soft. It takes it like 3mins to get soft.

Strain noodles and add to the sauce. Stir and cook for another 2mins.

And viola you have shrimp stir fry. You can also use chicken with the recipe.

Christmas Dinner

Hey guys

Happy New year from this side of the blog. I know I never update it as often as I would like, but I have some great pics for you today. I spent my first Christmas away from my family this year and I had mixed emotions about it. I was happy to finally be able to say I am an adult but sad as I missed my mummy and all her yummy cooking! So I gathered a few of my friends and had dinner GOODTIMES!! enjoy!

I had Some fish and Red velvet cake.!

Hello Blogfam and Tweeps/tweethearts/twepoles..hehe!!!! I hope everyone had a very fabulous week! and is excited that it is Friday! Because I AM!!! Anyways I have not been feeling well for the past month or so, so eating for me has been very sporadic. But on days like Wednesday night I remember how much I love good food! I was talking to someone AKA Dr Jax on Wednesday night and he said he was having fish for dinner and I remembered I had not had fish since my last post on fish in like June!!! So on my way from work. I stopped by my local grocery store and got some fish. I had grilled salmon with potatoes and coleslaw. The entire meal took me less than 30mins to prepare. if you need a recipe.. HOLA!!



I tried to make the pic a little artistic!.. hehe


When I was done making dinner. I made some cup cakes. I was just testing a recipe for something else I am doing soon. well here is the cupcake


It turned out really good! I will let you in on my secret later.. shh!!


Then I put some Icing on the cake!!! YUMMMMM!!!(and also VERY FATTENING)

Crepes...!

A couple of weeks ago Kemberley was craving Crepes on twitter and it made me realize I had not made them in a while! I promised to blog about an easy recipe for crepes so here we go! This weekend when I finally had a Saturday off work and could actually have real breakfast! I made Crepes for breakfast! It was the perfect breakfast! Well here is my recipe!

3 eggs
1 tsp Sugar
1 1/4 cups milk
1 cup all purpose flour
1/4 cup melted butter

Preparation:
Beat eggs until smooth. Add milk and butter.


Sift flour and sugar, gradually add to egg mixture.

Beat until the batter is smooth.

Batter will be thin, like heavy cream.

Grease skillet or crepe pan lightly;(what I do is I use a kitchen tissue and dip it lightly in oil and use that to rub on the pan)
Pour batter into pan and rotate quickly to distribute batter.
If batter seems too thick, add more milk in very small amounts until consistency is corrected.
Cook crepe until light brown; turn to cook other side. Remove from pan, lightly

grease the pan, and continue cooking until batter is finished.


Fill crepes with whatever you like. I like good ol Canadian maple syrup. My roommate likes Nutella(chocolate).. My friend liked Jam...lol we all had it with fruit!
